The main concern is topical — if parsnip sap or fresh root touches your skin and you're then exposed to sunlight or UV light (from a tanning bed, for example), you can develop contact dermatitis (skin irritation), blisters, or a phototoxic reaction (a sunburn-like rash). Light-skinned people appear to be at higher risk.
If this happens, the rash usually clears within a few days with moisturizing cream. Allergic contact dermatitis is rare.
