Properly cooked bamboo shoots are safe to eat as food, but supplement safety hasn't been well studied. Raw shoots can be toxic.

Bamboo shoots naturally contain cyanide compounds, though proper cooking (boiling, fermentation, or superheated steam drying) removes the hydrogen cyanide. A case of accidental cyanide poisoning from contaminated bamboo pickling brine caused serious illness and deaths, but that's a rare extreme scenario not typical of normal supplement use.

Contact dermatitis (skin irritation) has been reported from topical bamboo in at least one case. There isn't enough safety data on bamboo supplements during pregnancy, so the facts advise against concentrated forms like this extract.

For breastfeeding, safety is unknown; avoid concentrated extracts unless your doctor has cleared it.

Antithyroid Drugs

Theoretically, long-term bamboo use might increase the effects and adverse effects of antithyroid drugs, possibly leading to hypothyroidism.
Animal research suggests that long-term consumption of bamboo shoot can decrease thyroid peroxidase activity, as well as levels of thyroxine (T4) and triiodothyronine (T3). This effect has not yet been reported in humans.
