Methenamine Mandelate falls under ANTITHYROID DRUGS — the group Bamboo interacts with.
Animal research suggests that long-term consumption of bamboo shoot can decrease thyroid peroxidase activity, as well as levels of thyroxine (T4) and triiodothyronine (T3). This effect has not yet been reported in humans.
Interaction has been documented in animal or in lab research, or the interaction has been documented in humans but is limited to case reports or conflicting clinical research exists.
Just so we're on the same page, the interaction on file here is really about antithyroid medicines like methimazole, which work by lowering how much thyroid hormone your body makes. (The names got a little tangled in your question, so it's worth double-checking with your pharmacist exactly which pill you're holding.)
The idea is that bamboo, taken regularly over a long time, might gently push thyroid hormone (T4 and T3) down on its own. Stack that on top of a drug already designed to lower thyroid hormone, and in theory you could end up too low, with symptoms like fatigue, feeling cold, weight gain, or sluggishness. Honestly though, this is theoretical and only seen in animal studies so far, never confirmed in people. Eating cooked bamboo shoots in normal food amounts is unlikely to matter; concentrated daily supplements are the bigger question. Loop in your doctor before adding one.

Methimazole tablets are also used to bring thyroid hormone levels down before a patient undergoes thyroidectomy (thyroid surgery) or radioactive iodine treatment, making those procedures safer.
