INSULIN
Interaction has not been documented in well-controlled studies, however, the interaction has been demonstrated in some small human studies or in controlled animal studies in conjunction with multiple case reports..
Here's the gist for your bovine insulin (like Hypurin Bovine Neutral). Insulin is your direct blood-sugar-lowering medicine, not a prodrug that needs activating, so anything that also nudges blood sugar down can stack on top of it. In one lower-quality study, a concentrated apple extract (about 900 to 1800 mg before a meal) slowed how quickly blood sugar peaked after eating. Paired with insulin, the worry is an additive effect, meaning your sugar could drop lower than expected.
That could show up as shakiness, sweating, dizziness, or a fast heartbeat. Eating an apple won't do this; the concern is concentrated supplements. Please don't change your insulin on your own.
