Burdock is generally well tolerated when eaten as food and for short-term use in healthy adults, though human safety studies are limited. It's been used historically with few noted problems.

Rare serious allergic reactions — including contact dermatitis and anaphylaxis — have been reported. A single case of liver damage was documented in someone taking an herbal tea that contained burdock and other herbs, though it's unclear if burdock itself was responsible.
