Here's the simple version: guar gum is a thick, gel-forming fiber. When you swallow a concentrated dose, it can grab onto things in your gut, including your diclofenac, and slow down or slightly lower how much of the medicine your body soaks up. Diclofenac works as-is (it isn't a prodrug that needs activating), so the concern here is that you might get a bit less pain relief if the two are taken at the same moment.

The good news is this is easy to manage. Spacing them apart helps a lot. A common tip is to take your diclofenac first, then wait about 30 to 60 minutes before your guar gum. Food amounts of guar gum in things like sauces are unlikely to matter. If your arthritis or pain relief seems weaker than usual, check with your pharmacist or doctor before changing anything.

Diclofenac sodium topical gel is used to treat actinic keratoses (AK) — rough, scaly skin patches that form after years of sun exposure. These patches are considered precancerous, meaning they can develop into skin cancer if left untreated.
