Here's the basic idea: Humalog (insulin lispro) is a fast-acting insulin that lowers your blood sugar after meals. Some early animal studies hint that parsley itself might nudge blood sugar down a little. If that turned out to be true in people, stacking it on top of your insulin could in theory add up and push your sugar too low.
I want to be honest though, this is very weak evidence, and the parsley you sprinkle on dinner is highly unlikely to cause any trouble. The bigger question would be concentrated parsley extracts or seed capsules taken regularly. If you use those, just keep an eye out for low blood sugar signs (shakiness, sweating, dizziness, confusion) and check your numbers a bit more closely.
