ORAL DRUGS
Why this applies to Nitrofurantoin
Nitrofurantoin falls under ORAL DRUGS — the group Xanthan Gum interacts with.
Interaction has been documented in animal or in lab research, or the interaction has been documented in humans but is limited to case reports or conflicting clinical research exists.
Here's the gist with nitrofurantoin (Macrobid, Macrodantin) and xanthan gum. Xanthan gum is a soluble fiber that turns into a thick gel in your stomach and slows how fast things empty out of it. In theory, that gel could grab onto your antibiotic and slow or slightly reduce how much of it you absorb. Since nitrofurantoin needs to reach a good level in your urine to clear a UTI, anything that blunts absorption could, in theory, make it work a little less well.
This is only a theoretical concern based on how fiber behaves, not something proven in studies, and it's rated minor. To play it safe, take your nitrofurantoin first and wait about 30 to 60 minutes before any xanthan gum supplement. Food amounts are unlikely to matter. Check with your pharmacist if you're unsure.

From our pharmacist’s overview on the Nitrofurantoin page
“Nitrofurantoin (Macrobid, Macrodantin) treats urinary tract infections and can strain the liver on its own, which is why this interaction list deserves genuine care rather than a glance. Of the 82 ingredients on file, 38 can add their own liver stress on top of the drug's, and three of the four major-rated entries fall in that group, i…”
