Here's the gist with chicory and your pork insulin. Some lab and animal studies hint that chicory may have a mild blood-sugar-lowering effect of its own. If that holds true in people, stacking it on top of insulin could nudge your sugar a little lower than insulin alone would. The concern is added hypoglycemia, meaning symptoms like shakiness, sweating, a racing heart, confusion, or feeling lightheaded.

I want to be honest though: this is theoretical, based on early research, not strong human studies. A bit of chicory in coffee is unlikely to cause trouble. Concentrated supplements are the bigger question mark. If you start one, keep a closer eye on your glucose readings and check in with your pharmacist or doctor before changing anything.
