Here's the gist with chicory and your insulin (like NovoRapid): chicory may have a mild blood sugar lowering effect of its own. If you stack that on top of insulin, which already drives your sugar down, the two together could push your levels a little too low. That's hypoglycemia, and it can show up as shakiness, sweating, a fast heartbeat, confusion, or feeling lightheaded.

Now, the honest part: this concern is theoretical, coming mostly from animal and lab studies, not from people. A cup of chicory coffee likely won't rock the boat. More concentrated chicory or inulin supplements are the bigger question mark. If you'd like to try them, just keep checking your sugars and loop in your pharmacist or doctor first.
