Here's the gist: pork insulin already does one main job, which is to lower your blood sugar. Elderflower may gently nudge blood sugar down too. If both push in the same direction, your levels could dip lower than you expect, which means a bit more chance of hypoglycemia. That can show up as shakiness, sweating, a fast heartbeat, confusion, or feeling lightheaded.

I want to keep this in perspective, though. The concern comes from lab studies only, not from people, so it's more of a theoretical caution than a proven problem. A cup of elderflower tea now and then is unlikely to cause trouble. If you use concentrated extracts regularly, check your sugars a little more closely and let your pharmacist or doctor know before changing anything.
