Here's the gist with elderflower and your NovoRapid (insulin). Some early lab studies hint that elderflower may nudge blood sugar a little lower on its own. Since insulin already lowers your blood sugar, stacking the two together could, in theory, push you a bit too low. That can show up as shakiness, sweating, a racing heart, confusion, or in serious cases passing out.

Now, the honest part: this is based only on test-tube and animal research, not on real people, so the risk is more of a 'keep an eye out' than a sure thing. An occasional cup of elderflower tea is unlikely to cause trouble. Concentrated extracts taken regularly are where I'd be more cautious. If you want to try it, check your sugars a little more often at first and run it by your doctor or pharmacist before starting.
