Phenprocoumon falls under ANTICOAGULANT/ANTIPLATELET DRUGS — the group Sorrel interacts with.

Theoretically, sorrel might cause additive effects and side effects when used with anticoagulant or antiplatelet drugs.
In vitro, sorrel has been shown to inhibit platelet aggregation. However, this effect has not been reported in humans.

Phenprocoumon is a powerful blood thinner, much like warfarin, and it works in a very narrow range. Too little and you risk clots, too much and you risk bleeding. That's why even small nudges to its effect can matter. The concern here is theoretical: in lab dishes, sorrel slowed down platelets (the cells that help blood clot). On paper, pairing that with a blood thinner could add up and tip you toward easier bruising, nosebleeds, bleeding gums, or harder-to-stop cuts.

The good news: this platelet effect has never actually been seen in people, so the real-world risk is likely low, and tiny amounts of sorrel in cooking are unlikely to matter. Concentrated supplement doses are the bigger question. Before adding sorrel, check with your doctor or pharmacist so your clotting levels stay on track.
