Here's the gist for you. NovoRapid (a fast-acting insulin) lowers your blood sugar directly, so it isn't activated by an enzyme the way some other drugs are. The concern with sunflower oil isn't about how your body processes the insulin. Instead, some lower-quality studies suggest that leaning on sunflower oil as your main fat source may nudge fasting blood sugar a bit higher in people with type 2 diabetes.

If that happened, your usual insulin dose could feel like it's working a little less, meaning higher readings than you expect. This is mostly theoretical and based on weak evidence, and normal cooking amounts are unlikely to throw things off. Don't change your insulin on your own. If you start using a lot of sunflower oil, just keep an eye on your glucose and mention it to your pharmacist or doctor.
