Why this applies to Pacritinib
Pacritinib falls under CYTOCHROME P450 3A4 (CYP3A4) SUBSTRATES — the group Beet interacts with.
In vitro research suggests that betanin, the major pigment in beet, competitively inhibits CYP3A4 in a dose-dependent manner similarly to strong CYP3A4 inhibitor ketoconazole.
Interaction has been documented in animal or in lab research, or the interaction has been documented in humans but is limited to case reports or conflicting clinical research exists.
Here's the short version: your body uses an enzyme called CYP3A4 to help clear pacritinib (Vonjo) out of your system. In lab studies, a beet pigment called betanin slowed this same enzyme down. If that held true in people, pacritinib could build up a bit higher than expected, which might mean more of its usual side effects, things like diarrhea, nausea, low platelets (more bruising or bleeding), or swelling.
I want to be honest about the strength here: this is based only on test-tube research, not real patients, so it's theoretical. Eating beets at dinner is unlikely to be a problem. Concentrated beetroot supplements or juices are the bigger question mark. Before adding those, please check with your pharmacist or doctor, since pacritinib is a drug where levels really do matter.

What Is Pacritinib Used For?
Brand name: Vonjo
Vonjo (pacritinib) is used to treat adults with intermediate or high-risk myelofibrosis (MF) — a serious bone marrow disease — including primary MF and secondary MF that developed after polycythemia vera or essential thrombocythemia (other blood disorders). It is specifically approved for patients whose platelet count is below 50 × 10⁹/L (very low platelets), a group that has limited treatment options.
This approval is based on demonstrated reductions in spleen size. Continued approval may depend on results from confirmatory trials showing broader clinical benefit.
