Some animal research suggests that anthraquinones in rhubarb might have hepatotoxic effects. Also, rhubarb use has been linked to at least 24 cases of liver injury, although details on the dose of rhubarb and duration of use in these cases is unclear.

Here's the gist of it. The pill combo in Enovid-E (mestranol plus norethynodrel) is an older estrogen-progestin birth control, and like many hormone medicines, it passes through your liver to be processed. Rhubarb root, especially in concentrated supplement form, contains anthraquinones that may stress the liver in some people. The worry is simply that two things leaning on the liver at once could, in theory, add up.

I want to be honest about the strength of this: it's theoretical, drawn from animal data and a small number of unclear case reports. Eating rhubarb stalks in a pie is very unlikely to matter. If you regularly take rhubarb root supplements, just mention it to your pharmacist or doctor so they can keep an eye on things.
