Quinethazone (Hydromox) is a thiazide-type water pill that lowers blood pressure by helping your body get rid of extra salt and fluid. Saffron, in its own right, has shown a mild blood-pressure-lowering effect in some animal and early human studies. So the concern here is simple addition: put the two together and your pressure could dip lower than expected.

If that happens, you might feel dizzy or lightheaded, especially when standing up, and feel more tired than usual. I'll be honest though, this is mostly theoretical and based on weak evidence, and the small amount of saffron used in cooking is very unlikely to matter. Concentrated supplement doses are the bigger question. Before starting a saffron supplement, please check with your pharmacist or doctor so they can keep an eye on your numbers.
