Insulin (Pork) falls under ANTIDIABETES DRUGS — the group Saffron interacts with.
Some clinical research shows that taking saffron extract reduces fasting levels of glucose when used in addition to hypoglycemic agents. However, saffron powder itself has not been shown to reduce fasting glucose levels.
Interaction has been documented in animal or in lab research, or the interaction has been documented in humans but is limited to case reports or conflicting clinical research exists.
Here's the gist: pork insulin already lowers your blood sugar directly, and some early research suggests saffron extract may nudge your fasting glucose down a little further. Stacked together, that could push your blood sugar lower than you intend, which can bring on hypoglycemia: shakiness, sweating, a racing heart, confusion, or feeling lightheaded.
Worth keeping in perspective, though. This is mostly theoretical and rests on lower-quality studies, and it was saffron extract, not the small pinch you'd use in cooking, that showed any effect. A little saffron in your rice is very unlikely to matter. If you're thinking about a concentrated saffron supplement, check with your pharmacist or doctor first and keep a closer eye on your sugar readings.
