CAFFEINE
A small clinical study suggests that taking saffron powder 300 mg in 150 mL water daily for 5 days and then taking caffeine 200 mg seems to reduce caffeine metabolite levels in the saliva and urine in males, but not females. Theoretically, this may be due to the inhibition of cytochrome P450 1A2 by saffron.
Interaction has been documented in animal or in lab research, or the interaction has been documented in humans but is limited to case reports or conflicting clinical research exists.
Here's the gist: your body clears caffeine using a liver enzyme called CYP1A2. There's some early research suggesting saffron may slow that enzyme down a bit. If caffeine isn't broken down as quickly, it can linger longer and hit harder. With a caffeine pill like Vivarin, that could mean more jitteriness, a racing heart, trouble sleeping, or feeling wired and anxious from a dose you'd normally tolerate fine.
I want to keep this in perspective, though. This comes from one small study, and interestingly it showed the effect in men but not women. A pinch of saffron in your cooking is very unlikely to matter. If you're taking concentrated saffron supplements daily alongside caffeine and notice you feel more revved up than usual, that's worth a quick chat with your pharmacist or doctor.
