Darunavir, Ritonavir falls under CYTOCHROME P450 3A4 (CYP3A4) SUBSTRATES — the group Beet interacts with.

Theoretically, beet might increase the levels of CYP3A4 substrates.
In vitro research suggests that betanin, the major pigment in beet, competitively inhibits CYP3A4 in a dose-dependent manner similarly to strong CYP3A4 inhibitor ketoconazole.

Here's the situation with your HIV combo, darunavir with ritonavir. Both of these are handled by a liver enzyme called CYP3A4, and ritonavir itself already works partly by blocking that enzyme to boost darunavir levels. In lab dish studies, a beet pigment called betanin seemed to slow that same CYP3A4 pathway. In theory, that could push these drug levels a little higher, which might mean more of the usual side effects like nausea, diarrhea, headache, or rash.

Here's the honest part: this is only test-tube data, not something proven in people, so I wouldn't lose sleep over eating beets in normal food amounts. Concentrated beet supplements are the bigger question mark. Before adding a beet supplement, just run it by your pharmacist or doctor.
