Here's the gist for piroxicam (Feldene) and carob. Carob pods are loaded with fiber and tannins, and the concern is that those compounds could grab onto things in your gut and slow down how well a swallowed medicine gets absorbed. If less piroxicam makes it into your bloodstream, you might get a little less relief from your arthritis pain, swelling, and stiffness.

Honestly, this is a very minor, mostly theoretical worry that comes from lab and animal work, not from real patients, so I wouldn't lose sleep over it. A normal food amount of carob is unlikely to matter much. If you use carob regularly or as a supplement, a simple fix is to take your piroxicam first and wait 30 to 60 minutes before the carob.
