Here is the interaction we found between these two, with the evidence behind it.
HEPATOTOXIC DRUGS
Why this applies to Sulfadiazine
Sulfadiazine falls under HEPATOTOXIC DRUGS — the group Cassia Cinnamon interacts with.
There is some concern that ingesting large amounts of cassia cinnamon for an extended duration might cause hepatotoxicity in some people. Cassia cinnamon contains coumarin, which can cause hepatotoxicity in animal models. In humans, very high doses of coumarin from 50-7000 mg/day can result in hepatotoxicity that resolves when coumarin use is discontinued. Lower amounts might also cause liver problems in sensitive people, such as those with liver disease or those taking potentially hepatotoxic agents.
Interaction has been documented in animal or in lab research, or the interaction has been documented in humans but is limited to case reports or conflicting clinical research exists.
Here's the gist with sulfadiazine and cassia cinnamon. Sulfa antibiotics like this one can occasionally be tough on the liver. Cassia cinnamon is naturally high in coumarin, and in big concentrated doses taken for a long time, coumarin has been linked to liver stress too. The worry is that stacking the two might add up and put more strain on your liver than either alone.
I'll be honest: this is theoretical, based on how these compounds behave rather than real-world reports, so I don't want to alarm you. The cinnamon you sprinkle on food is not the concern here. Daily high-dose supplements are. If you take a cinnamon supplement during your sulfadiazine course, mention it to your pharmacist or doctor so they can keep an eye on things.

From our pharmacist’s overview on the Sulfadiazine page
“Sulfadiazine treats serious infections like toxoplasmosis, often over long courses, and its list of 107 interacting supplements calls for real care. The most direct problem is PABA, sold as a B-vitamin relative, because it can blunt sulfadiazine's antibacterial effect outright.”

About Cassia Cinnamon
What is Cassia Cinnamon?
- Blood sugar support
- Digestive upset
- Antioxidant support
- Flavoring and culinary use
- Antimicrobial
Cassia cinnamon is the common, inexpensive cinnamon used in cooking, and it is also taken as a supplement, most often for blood sugar support. The evidence for its health benefits is mixed and far from proven, and because cassia is naturally high in coumarin, taking large amounts regularly may stress the liver. Use food amounts freely, but talk with a pharmacist or doctor before using high-dose supplements.
About Sulfadiazine
What Is Sulfadiazine Used For?
Brand name: Sulfadiazine
Sulfadiazine tablets are used to treat several types of bacterial and parasitic infections. These include urinary tract infections (such as kidney and bladder infections caused by susceptible bacteria), toxoplasmosis encephalitis (a brain infection caused by a parasite), chancroid, trachoma, inclusion conjunctivitis, nocardiosis, meningococcal meningitis, acute otitis media (middle ear infection) due to H. influenzae, and malaria caused by chloroquine-resistant strains — though the last two are used alongside other medicines.
Sulfadiazine tablets are also used to help prevent meningococcal meningitis in close contacts when the bacteria are known to be susceptible, and to prevent recurrences of rheumatic fever as an alternative to penicillin. For urinary tract infections, it should only be used after more soluble sulfonamide options have not worked.
