Here's the gist for your Humalog (insulin lispro). This is a fast-acting mealtime insulin whose whole job is to bring your blood sugar down. The concern with wheatgrass is simply additive: some animal studies suggest it may nudge your own insulin release and lower glucose a little on its own. Stack that on top of your injected insulin and, in theory, your sugar could dip lower than expected, raising the chance of a low (hypoglycemia).
I want to be honest about the evidence here, though, it's based on lab and animal work, not solid human studies, so the real-world effect is probably small. If you do use wheatgrass regularly, just keep an eye on your readings for shakiness, sweating, or dizziness, and let your doctor or pharmacist know so they can help you watch your numbers.
