Properly cooked bamboo shoots are eaten widely without concern, but the safety of concentrated supplement forms isn't well studied. Bamboo shoots contain cyanide glycosides—compounds that produce hydrogen cyanide—but this is eliminated during boiling, fermentation, or steam drying.
Raw shoots can be toxic. In rare cases, bamboo has caused contact dermatitis (skin irritation) when applied to skin.
Avoid bamboo supplements during pregnancy because there isn't enough safety data. While breastfeeding, the safety of concentrated extracts is unknown; talk with your doctor or pharmacist before using one.

Animal research suggests bamboo can lower thyroid peroxidase activity and reduce levels of thyroid hormones T4 and T3, though this effect hasn't been documented in humans yet.

Antithyroid Drugs
Theoretically, long-term bamboo use might increase the effects and adverse effects of antithyroid drugs, possibly leading to hypothyroidism.
Animal research suggests that long-term consumption of bamboo shoot can decrease thyroid peroxidase activity, as well as levels of thyroxine (T4) and triiodothyronine (T3). This effect has not yet been reported in humans.
