Here's the gist with carob and your doxycycline. Carob is rich in tannins and fiber, and the concern is that those compounds could bind up some of the antibiotic in your gut before your body absorbs it. If less doxycycline gets into your bloodstream, it may not fight the infection as well. This is something doxycycline is already known for, since it grabs onto minerals like calcium, iron, and magnesium too.

That said, this is a theoretical, minor concern based mostly on lab studies, so don't panic. A simple fix is spacing them out: take your doxycycline first, then wait about 30 to 60 minutes before having carob. If you're unsure, your pharmacist can help you set up the timing.

Carob is a Mediterranean tree whose pods are widely used as a caffeine-free, naturally sweet cocoa alternative and as a thickener (carob gum). It is mostly eaten as a food and is generally well tolerated, and carob pod preparations have some traditional and limited research use for diarrhea, but evidence for most medicinal claims is limited. Check with your pharmacist or doctor before using it as a treatment, especially for infants or children.

Doxycycline belongs to the tetracycline family of antibiotics. It's prescribed for many types of bacterial infections, including respiratory tract infections, sexually transmitted infections (STIs), tick-borne illnesses like Rocky Mountain spotted fever, and eye infections. It's also used to help prevent malaria and, in some cases, as a helper treatment for severe acne.

In situations where penicillin-type antibiotics can't be used — due to allergy, for example — doxycycline can step in as an alternative. It should only be used for infections that are proven or strongly suspected to be caused by bacteria.
