Here is the interaction we found between these two, with the evidence behind it.
ANTIHYPERTENSIVE DRUGS
Why this applies to Methyldopa
Methyldopa falls under ANTIHYPERTENSIVE DRUGS — the group Saffron interacts with.
Animal and human research suggests that saffron extract can decrease blood pressure.
Interaction has been documented in animal or in lab research, or the interaction has been documented in humans but is limited to case reports or conflicting clinical research exists.
Here's the simple version: saffron itself can nudge your blood pressure down a little. Since methyldopa is already working to lower your pressure, stacking the two could mean the effect adds up. That might leave you feeling dizzy, lightheaded, tired, or a bit foggy, especially when you stand up quickly.
I want to be honest about how solid this is. The concern here comes mostly from animal studies and early human research, so it's more of a theoretical caution than a proven problem. A pinch of saffron in your cooking is very unlikely to matter. Concentrated supplement doses are where I'd pay closer attention. Before starting a saffron supplement, check in with your pharmacist or doctor so they can keep an eye on your readings.

From our pharmacist’s overview on the Methyldopa page
“Alcohol is the entry I would read first. Methyldopa (Aldomet) can be hard on the liver by itself, and 38 of the 173 supplement and herbal ingredients here, beer and wine included, carry liver risks that could stack on top of that.”

About Saffron
What is Saffron?
- Depression and low mood
- Anxiety
- PMS symptoms
- Memory and cognition
- Eye health (age-related macular degeneration)
Saffron is a costly spice that has shown promise in early studies for mild-to-moderate depression and some mood and PMS symptoms, but most research uses small trials, so results are not definitive. It is generally well tolerated in food and small supplement amounts, but high doses can be harmful and it should be avoided in pregnancy. Talk to your pharmacist or doctor before using saffron supplements.

Methyldopa Is Linked to Lower Levels of One Nutrient
Natural Medicines records Methyldopa as a medicine that can lower these. This is not an interaction with Saffron — it is a separate effect of the medicine, and it is a reason some people are advised to supplement rather than to avoid one:
