Why this applies to Insulin (Pork)
Insulin (Pork) falls under ANTIDIABETES DRUGS — the group Sesame interacts with.
Clinical studies show that sesame oil can decrease plasma glucose and glycated hemoglobin (HbA1c) levels. Some clinical research in patients taking glibenclamide shows that using sesame oil or a blend of sesame oil and rice bran oil in place of other oil for cooking reduces plasma glucose more than glibenclamide alone. Monitor blood glucose levels closely. Dose adjustments might be necessary.
Interaction has been documented in animal or in lab research, or the interaction has been documented in humans but is limited to case reports or conflicting clinical research exists.
Here's the gist: pork insulin already lowers your blood sugar, and sesame may give that a small extra nudge in the same direction. In some studies, using sesame oil for cooking modestly lowered blood glucose and HbA1c. Stack that on top of your insulin and there's a chance your sugar could dip a little lower than expected, raising the odds of hypoglycemia, things like shakiness, sweating, a racing heart, dizziness, confusion, or feeling suddenly weak.
That said, this is mostly a theoretical concern based on how sesame seems to behave, not strong proof. Sprinkling sesame on food is unlikely to cause trouble. If you regularly cook with a lot of sesame oil or take concentrated sesame supplements, just check your blood sugar a bit more closely and let your pharmacist or doctor know before changing anything.
