Here's the gist for these two together. Acarbose works right in your gut, slowing how fast carbs get broken down so your blood sugar doesn't spike after meals. Apple cider vinegar may nudge things in a similar direction, gently lowering blood sugar and slowing how quickly your stomach empties. So in theory, stacking them could add up and push your sugar a little lower than expected, raising the chance of a low (think shakiness, sweating, dizziness, or feeling foggy).

That said, this is rated as a minor, mostly theoretical concern, and the amount of vinegar in a Goli gummy is pretty small. For most people it's unlikely to cause trouble.
