Burdock is generally well tolerated when eaten as a food and for short-term use in otherwise healthy adults, though human safety data are limited. Allergic reactions, including contact dermatitis (skin rash from contact) and anaphylaxis (a severe whole-body reaction), are rare but can happen.
A single case of liver injury was reported in someone taking a detox tea with burdock and other ingredients, though it's unclear which component caused it. There's also a small number of cases of contact dermatitis from prolonged use of burdock root oil or burdock plasters.
