Here is the interaction we found between these two, with the evidence behind it.
ANTIDIABETES DRUGS
Why this applies to Glucose
Glucose falls under ANTIDIABETES DRUGS — the group Coconut Water interacts with.
Animal research suggests that coconut water might increase insulin levels and/or decrease blood glucose levels.
Interaction has been demonstrated in animal or in lab research but has been shown not to occur in humans..
Here's a little wrinkle worth knowing about. Some early animal studies hint that coconut water may nudge blood sugar down, possibly by bumping up insulin a bit. Glucose, on the other hand, is given (often by IV or as a fast-acting sugar) to do the opposite, that is, to raise low blood sugar quickly. So in theory, sipping coconut water could work slightly against what glucose is trying to accomplish.
I want to be honest with you though: this is based on lab and animal research only, the effect is rated minor, and it's considered unlikely to cause real problems in people. A glass of coconut water is not going to override emergency glucose treatment. If you're using glucose for diabetes lows, just keep an eye on your readings and ask your pharmacist or doctor if you have concerns.

By severity: 2 major · 215 moderate · 39 minor.
From our pharmacist’s overview on the Glucose page
“Glucose given by IV raises a dangerously low blood sugar, and this list warrants real caution because most of its 256 ingredients pull the other way. Nearly all of them lower blood sugar on their own, working against the treatment and setting up another crash.”

About Coconut Water
What is Coconut Water?
- Hydration
- Rehydration after exercise
- Electrolyte replacement
- General wellness drink
- Blood pressure support
Coconut water is a natural drink rich in potassium and other electrolytes that many people use for hydration, especially around exercise. For most healthy people it is a safe, tasty beverage, but it is not a proven medicine and should not replace medical electrolyte solutions for serious dehydration. People with kidney disease or those on potassium-affecting medicines should check with their pharmacist or doctor first.

Glucose Is Linked to Lower Levels of One Nutrient
Natural Medicines records Glucose as a medicine that can lower these. This is not an interaction with Coconut Water — it is a separate effect of the medicine, and it is a reason some people are advised to supplement rather than to avoid one:
