Let me put your mind at ease here. Eating cucumber the way most of us do (in salads, sandwiches, or with dip) is not going to throw off your Levemir. This concern comes from concentrated cucumber seed extract in animal studies, where it slightly lowered blood sugar. There's no solid human evidence behind it, so it stays in the theoretical column.
The idea is simply additive: if a cucumber product nudged your sugar down while your insulin detemir is already lowering it, you could in theory drift toward low blood sugar (shakiness, sweating, dizziness, confusion). If you start a concentrated cucumber supplement, just check your numbers a bit more closely at first and let your pharmacist or doctor know.
