Animal research suggests that (-)-carvone, a major constituent of spearmint, has sedative effects. However, in humans, chewing spearmint-flavored gum induced arousal effects.
Interaction has been documented in animal or in lab research, or the interaction has been documented in humans but is limited to case reports or conflicting clinical research exists.
Here's the honest picture: the concern with spearmint and phenytoin is really about add-on drowsiness, not anything that changes how your body handles the drug itself. Phenytoin works on your nervous system, and one compound in spearmint, called carvone, made animals a bit sleepy in lab studies. So in theory, pairing the two could nudge your sedation, things like extra grogginess, dizziness, or feeling unsteady, which phenytoin can already cause.
That said, the evidence here is very weak and theoretical. Interestingly, people who chewed spearmint gum actually felt more alert, not sleepy. Food and tea amounts of spearmint almost certainly won't matter. Since phenytoin needs careful, steady levels, just run any concentrated spearmint supplement by your pharmacist or doctor first.

Animal research suggests that drinking spearmint tea for 30 days can increase markers of liver damage, including aspartate aminotransferase (AST) and alanine aminotransferase (ALT), and cause liver degeneration and necrosis, in a dose-dependent manner. This effect has not been reported in humans.

Here's the gist for spearmint and phenytoin (Dilantin). Phenytoin is processed by your liver, and it can occasionally stress the liver on its own. The concern here isn't about spearmint changing how much phenytoin is in your blood. Instead, the idea is that both could be tough on the liver at the same time, so the worry is added strain rather than a stronger or weaker seizure effect.
I want to keep this in perspective. This is a theoretical flag based mostly on animal studies using large amounts of spearmint for 30 days. It hasn't been reported in people, and normal food or tea amounts are very unlikely to matter. If you're considering a concentrated spearmint supplement, just run it by your pharmacist or doctor first, since phenytoin already calls for occasional liver checks.

What Is Phenytoin Used For?
Brand names: Dilantin Kapseals, Dilantin, Di-Phen, Dilantin Infatabs, Phenytek, Dilantin injection
Phenytoin treats seizures. Oral products are used for generalized tonic-clonic (grand mal) seizures and for psychomotor (temporal lobe) or complex partial seizures. Most oral products are also used to prevent and treat seizures during or after neurosurgery.
Phenytoin Sodium Injection is used for generalized tonic-clonic status epilepticus (a prolonged, dangerous seizure emergency). It is also used for seizures during neurosurgery. The injection should be used only when taking phenytoin by mouth is not possible. Dilantin-125 and Phenytoin oral suspension are listed for tonic-clonic and psychomotor seizures.
