Why this applies to Doxycycline
Doxycycline falls under HEPATOTOXIC DRUGS — the group Spearmint interacts with.
Animal research suggests that drinking spearmint tea for 30 days can increase markers of liver damage, including aspartate aminotransferase (AST) and alanine aminotransferase (ALT), and cause liver degeneration and necrosis, in a dose-dependent manner. This effect has not been reported in humans.
Interaction has been documented in animal or in lab research, or the interaction has been documented in humans but is limited to case reports or conflicting clinical research exists.
Here's the honest picture with spearmint and doxycycline. Doxycycline can occasionally be tough on the liver, and there's a theory that very concentrated spearmint, taken in large amounts, might add a little extra strain on the liver too. If both nudged the liver in the same direction, you could in theory see things like nausea, belly discomfort, unusual tiredness, or yellowing of the skin or eyes. Those would be reasons to call your doctor.
That said, this concern comes only from animal studies using heavy spearmint doses over time, and it has never actually been reported in people. A cup of spearmint tea or mint in your food is very unlikely to be a problem. The caution really applies to strong, standardized spearmint supplements. If you plan to use those while on doxycycline, just run it by your pharmacist or doctor first.

Doxycycline is an antibiotic. It treats infections caused by bacteria, and it does not work on viruses.
Several products carry a broad list of uses, including rickettsial infections, sexually transmitted infections, respiratory tract infections, eye infections, and anthrax after exposure. Some product labels also list malaria prevention, and use as an add-on treatment for acute intestinal amebiasis and severe acne. Doxycycline for Injection (Doxy 100, intravenous) is approved for infections caused by a listed set of microorganisms. Doxycycline capsules in the Oracea-type low-dose form are described in the evidence for inflammatory lesions of rosacea.
