Insulin (Pork) falls under ANTIDIABETES DRUGS — the group Jackfruit interacts with.

Theoretically, jackfruit might increase the risk of hypoglycemia when taken with antidiabetes drugs.

Here's the simple version: pork insulin already works to bring your blood sugar down, and jackfruit may nudge it down a little more. Some small studies found that jackfruit flour or leaf extract lowered fasting and after-meal glucose. So stacking the two could in theory tip you into low blood sugar (hypoglycemia), with signs like shakiness, sweating, a fast heartbeat, dizziness, hunger, or confusion.

Keep this in perspective. This concern is theoretical, based mostly on how jackfruit behaves rather than strong human proof, and eating jackfruit as a normal fruit is far less likely to matter than concentrated extracts or flour. If you enjoy jackfruit, just check your glucose a bit more closely and talk with your pharmacist or doctor before changing any insulin dose.
